It’s time for soft-baked and chewy cookies with pleasant tastes of autumn to soothe the soul.
Preheat the oven to 350°F and prepare two baking sheets with parchment paper.
INGREDIENTS:
½ cup unsalted butter, melted in your microwave for about 15-20 seconds or in a saucepan on low heat
½ cup dark brown sugar, pack it in tight
¼ cup granulated white sugar or light brown if you prefer
1 and ½ teaspoons pure vanilla extract
5-6 full tablespoons pumpkin puree from a can or fresh pureed pumpkin
1 and ½ cups of all-purpose flour
¼ teaspoon baking soda
¼ teaspoon baking powder
¼ teaspoon salt
2 teaspoons pure ground cinnamon
1/8 teaspoon cardamon
1/8 teaspoon nutmeg
1/8 teaspoon cloves
1 teaspoon pumpkin pie spice
1/3 cup chocolate chips (up to 2/3 cup if you really love chocolate chips!)
QUICK AND EASY PREPARATION:
Whisk the melted butter and the two sugars together until smooth. Add vanilla and pumpkin puree, and stir until it is smooth as satin.
In a separate bowl, whisk and blend the flour, baking soda, baking powder, salt, cinnamon, cardamon, nutmeg, cloves and pumpkin pie spice.
Add the butter pumpkin mixture to the flour mixture and stir with a wooden spoon, mixing well. The blend should have a soft consistency. Use a rubber or silicone spatula to fold in the chocolate chips and keep stirring to combine the mixture as thoroughly as possible, since the butter makes it slippery.
Cover the bowl and chill the dough for 30-60 minutes, then remove it from the refrigerator. Using a large tablespoon, make each cookie from an overly-generous scoop of dough and place it on the baking sheet. Press it down gently with a spoon to spread it since the dough is still cold.
Bake for 11-12 minutes, then remove from oven. The centers may look soft, but they are baked. Let the cookies cool on the sheet for anywhere from 5-15 minutes, the longer the tastier!
