Recipe: Strawberry Honey Cake

We always seek a fun and delicious recipe for our Wednesday post and love to showcase popular Youtube bakers and chefs to inspire you. The recipes we choose must have a honey or bee theme because that’s what we are all about, and in this sense, the recipe calls for plenty of honey and strawberry jam. Bee love!

This week we’ve found a lovely easy Honey Cake Recipe by N’Oven – Cake & Cookies. Their video shows you how to make bakery style honey cake that is egg-free and oven-free.

INGREDIENTS & METHODOLOGY: 

Start with:

½ a cup of yogurt

¼ cup of oil

Mix well with a hand beater then in a sieve:

1 ¼ cups of flour (Maida)

¾ cup of powdered sugar

1 teaspoon baking powder

½ teaspoon baking soda

Stir the mixture until soft with a spatula then add:

¼ cup milk

Mix well, then pour into an oil greased mould

Place in a pre-heated pan and cook in low medium heat for 25-30 minutes

When cake is ready let it cool completely

In a non-stick pan mix:

2 tablespoons sugar

¼ cup water

Stir as you heat them to a boil, then add:

¼ cup honey

Mix really well over the heat

Prick the cake with a fork all over the top

Lavishly top cake by spreading the honey syrup

In the empty pan add:

¼ cup of strawberry jam

1 teaspoon of honey

Mix well over low heat and do not overheat

Spread over the entire cake top

Top with sprinkles of coconut flakes

Cut into rectangular slices and enjoy!
