This time of year, when golden autumn blessings surround us and our hearts seek to feel gratitude for the good things in our lives, the flavor of honey and apple cake with subtle spices is enough to fan the flame of thanks in our hearts.

Apples and honey are gifts from the bees. No bees, no honey. No bees, and not many apples, either. The apples on your countertop were flowers on an apple tree just three to six months ago.

1 Bundt Cake Pan (use a brush to grease it with melted butter)

Pre-heat the oven to 175C or 345F.

BAKE THE CAKE:

Mix these and set aside:

2 red apples, peeled and cut into cubes, placed in a bowl

2 Tbsp sugar added to the apple.

2 teaspoons of cinnamon added to the apple.

In a bowl combine all these ingredients and mix with an electric mixer:

1 cup of soft butter

½ cup flour

2 cups icing sugar

1 teaspoon ginger

1 Tablespoon cardamom

2 cups almond flour

4 eggs, crack one egg at a time into the flour mixture and beat until the mixture is quite creamy.

Take the greased Bundt cake pan and add 1/3 of the batter to it and then spread evenly. Next, add ½ the apples in a layer on top around the pan. Put on a second layer of 1/3 of the cake batter and smooth it evenly over the apples. Pour the rest of the apple mixture on top as evenly distributed as possible. Finish up by spreading the rest of the batter evenly around the top of the cake pan.

Bake in the pre-heated oven for 35-40 minutes.

HONEY GLAZE:

Add ¼ cup of butter to a pan and melt it, then add:

1/3 cup of golden syrup and ¼ cup of honey

Cook on medium to high heat and stir. Bring it to a boil and cook for about 2 extra minutes.

Add 3 Tablespoons of cream and mix. Set aside to cool to room temperature.

FROSTING:

In a bowl add:

1 cup cream cheese, ½ cup of icing sugar, 1 teaspoon of vanilla extract and ½ a cup of cream

Mix with an electric mixer until it is smooth and creamy.

PUTTING IT ALL TOGETHER:

Remove the cake from the oven and then from the cake pan.

Put frosting in a piping bag and make a frosting border by applying it around the bottom of the cake.

Pour the honey glaze all over the cake and finish decorating by using apple slices as fresh garnishes.
